A sharp necessity ripened today to develop and implement national standards of Ukraine in meat and meat-vegetable products (sausages with the addition of vegetable products). This was stated by the President of Derzhspozhivstandart of Ukraine Larisa LOSYUK at the meeting with manufacturers of meat processing industry on the problems of application of national standards for sausages, which took place June 23 this year. The meeting was attended by representatives of the Ministry of Economy, Ministry of Agrarian Policy of Ukraine, State Committee of Veterinary Medicine of Ukraine, Technological Institute of milk and meat, Technical Committee 140 "Milk, meat and products of their processing". Manufacturers represented by the National Association of meat and meat products of Ukraine "Ukrmjaso" and several leading companies in this industry. According to the Derzhspozhivstandart’s President, the development of this standard can be defined as one of the main issues in the Derzhspozhhivstandart, because in Ukraine there is no standard that what would regulate the production of sausages with addition of, for example, vegetable ingredients (soy, flour, starch, etc.).
"This standard might set requirements regarding the composition of such products, methods of controlling their production and the appropriate markings - said Larissa LOSYUK. - Also, it should ban the use of meat, vegetable own production of meat products, in order not to misinform the consumer. " As reported by the Chairman, after appropriate standard of all business entities will be forced to bring its specifications to its requirements. This principled position of the Committee is that solving this problem requires a collective effort: as representatives of the government, and manufacturers of meat processing industry, as practiced in Europe, where producers are actively involved in developing standards. Develop new standard is planned soon.

For the reliable informing of users it is forbidden to appropriate national standards sausages of new assortment and create derivative works from well-known names, or use these names in words with other words. Attributed to the traditional assortment of sausages with known names, which produce for the state and interstate standards. Another important problem that still is not resolved, she called the quality of food additives, the acceptable norms of their content in food products and methods of control. It should be noted that international standards do not include their use. At the same time, national standards for meat products allow you to use such raw materials as stabilizers structures, soy protein and its derivatives, sodium glutamate (taste), skin swine, as well as composite additives. It should also limit the use of many food additives in sausages, content can not be determined in the production laboratory method.
